Venison Pot Roast

  • 3–4 lb venison roast
  • Olive oil, onion, garlic
  • Rosemary, thyme, bay leaves
  • Beef broth, carrots, celery, potatoes
  • Au Jus mix, cornstarch
Instructions:
  1. Preheat oven to 300°F.
  2. Sear roast in a Dutch oven.
  3. Add onion, garlic, herbs, and broth.
  4. Cover and bake 3 hours.
  5. Add vegetables and cook until tender.
  6. Make gravy with cornstarch and pan juices.
